Ukrainian Old-fashioned Honey Babka: sweet, fluffy, moist; topped with a creamy frosting for that extra incredible taste. The easiest and the best honey dessert you’ll ever taste!
Ingredients:
- 2 1/2 cups plain flour
- 8 eggs at room temperature
- 1 cup granulated sugar
- 1 cup honey, heated gently
- 455 grams sour cream
- 2 teaspoons baking soda
- 2 tablespoons white vinegar
- 1./2 teaspoon salt
Frosting Ingredients:

- 226 grams cream cheese
- 226 grams whipped cream
- 1/2 cup icing sugar
Method:
- Preheat the oven to 350 degrees Fahrenheit. Line a large baking sheet (approx 11 x 17 inches) with parchment paper allowing extra paper around the sides to prevent batter spilling over
In a large bowl beat the eggs and sugar and salt until light and fluffy - In a small bowl combine the vinegar with baking soda, allow it to fizz up.
- Warm the honey and then add the soda/vinegar mixture, honey and sour cream to the batter
- Beat together with a mixer on low until just combined
- Sift the flour into the batter and combine with a mixer on low
- The batter should be runny, don’t overbeat or you will lose the fluffy texture
- Pour all the batter into the prepared baking sheet and level with a spatula
- Bake for 30 minutes until a skewer comes out clean
- Carefully place a cooling rack over the cake and gently flip over the baking tray
- Remove the parchment from the bottom of the cake and place a large cutting board onto the cake and gently flip again
- Let the cake cool
- Once cool cut up the cake into even squares – about 2 inches square
To Make the Frosting:
In a medium bowl combine the cream cheese and the sieved icing sugar with a mixer on a low speed
Add the whipped cream and continue to beat together until the frosting is thick
Pipe the frosting onto the Honey Babka and serve
